How to make Instant Pot Mexican Pork Stew

Ingredients

1 ½ lb pork shoulder cubed into bite sized pieces

1 jalapeno pepper chopped, seeds removed

1 cup tomatoes canned, chopped

½ bell pepper diced

2 cloves garlic minced

1 tbsp onion chopped

1/2 cup water

½ tsp paprika

1 tsp sea salt

1 tbsp cilantro chopped

lime wedges for garnish

Instructions

1. Place pork cubes into the instant pot.

2. Add in canned chopped tomatoes, bell pepper, jalapeno, onion, and garlic. Pour in water and add paprika and salt. Mix everything together until well combined.

3. Put the lid on and turn the valve to “sealing.” Press “pressure cook” (manual) and cook on high pressure for 35 minutes.

4. Once finished cooking, allow the pressure to release naturally and take the lid off.

5. Divide the stew between serving plates, sprinkle with chopped cilantro, and serve with lime wedges.
