Creamy Tuna 2 Minute Zoodles


This recipe takes literally no time at all to prepare and you’re rewarded with a delicious bowl full of creamy, cheesy noodles and tuna with very little carbs.

I’ve made this several times over the past couple of weeks and knew that I had to share the simplicity and deliciousness with you.

Creamy Tuna 2 Minute Zoodles Recipe

1 Medium Zucchini

2 Tablespoons Cream

2 Tablespoons Mascarpone or Cream Cheese

1 small tin tuna

2 Tablespoons Parmesan

Salt & Pepper To Taste


1. Wash and trim the ends from the zucchini and spiralize into noodles with your Spiralizer of Choice.

2. Heat the cream and mascarpone in a large frying pan over medium/high heat.

3. When bubbling add the spiralized zucchini and tuna.

4. Heat through, add the parmesan, salt and pepper to taste and cook until creamy.

5. Serve as is or topped with more parmesan.

Recipe variations:

Switch up the mascarpone with cream cheese or other thickened cheese.

Instead of parmesan crumble over feta or other cheese of choice.

Instead of a tin of tuna use a tin of salmon or other fish/seafood.

You could double the recipe to feed a whole family, adding more zucchini and other vegetables to taste.
