Bring home a rotisserie chicken to make this as an easy dinner, then save leftovers for lunch.  If you don’t have feta cheese then try subbing in slices of mozzarella or halloumi.

Yields 2 servings of Easy Chicken and Feta Plate


THE PREPARATION:

 

10 ounces rotisserie chicken

6 ounces feta cheese, sliced

2 medium tomatoes, sliced

2 ounces spring mix lettuce

10 whole black olives

4 tablespoons olive oil

Salt and pepper, to taste

 

THE EXECUTION:

 

1. Arrange the rotisserie chicken, feta cheese, tomatoes, spring mix, and olives on a plate.

 


2. Season with salt and pepper. Serve with olive oil for dipping or drizzling.
