Balsamic Tomato Mozzarella Chicken

Ready in just 15 minutes! Try this quick and easy flavourful recipe and pair it with a salad, pasta or any your favourite sides. It's made with just a few simple ingredients and is guaranteed to impress 👌⠀

2 tablespoons of olive oil
2 large chicken breasts, butterflied to create 4 pieces (ensure that when you butterfly the pieces they are all the same thickness)
Italian seasoning
1 cup of cherry/grape tomatoes, cut into halves
1 tablespoon of minced garlic
2 tablespoons of balsamic glaze
4 tablespoons of water
Approximately 1 cup of shredded mozzarella cheese (however more or less will work too, it's all up to you!)
🔹️Butterfly chicken breast, season both sides generously with salt, pepper and Italian seasoning.
🔹️In a large/deep pan heat olive oil and reduce to low-medium heat. Add chicken and cook for approximately 4 minutes on each side (ensure that chicken is cooked throughout).
🔹️Remove chicken from pan and set aside temporarily. Do not wash pan!
🔹️Add balsamic glaze, garlic and water to the pan and mix for 30 seconds.
🔹️Add tomatoes plus a pinch of salt and pepper and mix for 1 minute.
🔹️Return chicken to pan, top with mozzarella cheese and tomatoes. Turn off burner and cover pan with lid for 2 minutes to allow cheese to melt. Serve and enjoy!!
