Keto Cucumber Salad

If your dinner or lunch entrée happens to be a little heavy, but you’d still like a side dish, this light cucumber salad is the perfect solution! The cool cucumber slices are slightly sweet, slightly tangy, and stay crunchy. You can even whip up a batch and can it in mason jars so you can enjoy the light cucumber salad during any time of year.

Cucumber Peeled Raw:1 pound,(454g or 16.01 oz)
Rice Vinegar by Kikkoman:1 tablespoon,
Salt: ½ teaspoon,(3g or 0.11 oz)
Spices Dill Seed: ¼ tsp,1g or 0.04 oz)
Spices Paprika:1 tsp,(2g or 0.07 oz)
Parsley Raw:1 teaspoon,(1g or 0.04 oz)


1. To prepare the cucumber slices, peel and core the whole cucumbers. Use a knife or a slicer to slice the cucumbers incredibly thin and combine it all in a bowl.
2. Chop the fresh parsley, and add all the remaining ingredients to the bowl. Gently fold the cucumber slices and seasonings together.
3. Place a piece of plastic wrap over the cucumbers and seal the bowl with a lid or additional plastic wrap. Refrigerate the cucumber salad for at least 6 hours but preferably overnight. For serving, gently stir the ingredients together, and garnish with additional chopped parsley.
